Best Strawberry Cake Recipe (with whipped frosting)!

Up until my cousin’s birthday, I had never made a strawberry cake from scratch.  If people want real strawberries, I make variations of shortcake.  My husband also liked strawberry cake from a box when we were dating.  To find the best strawberry cake recipe, I turned to Pinterest, found Sweetapolita’s blog and adapted her recipe to my taste.

Strawberry Cake with Whipped Strawberry Frosting...

  • Cake Ingredients:
  • 1-3/4 cups of sugar 1-3 ounce package of Strawberry Jell-O
  • 1 cup of butter, softened
  • 4 eggs, room temperature
  • 3 cups of sifted flour (I just used all-purpose because it's what I had on hand!)
  • 1 tablespoon of baking powder
  • 3/4 teaspoon of salt
  • 1 cup of whole milk, room temperature
  • 1 tablespoon of vanilla extract
  • 1/4 cup of strawberry puree made from a small bag of frozen strawberries, closer to room temperature
  • Frosting Ingredients:
  • 3 sticks + 2 tablespoons of unsalted butter, softened and cut into cubes
  • 4 cups of confectioners’ sugar
  • 1 tablespoon of whole milk
  • 1 1/2 teaspoon of vanilla extract
  • pinch of salt
  • 3 tablespoons of strawberry puree made from frozen strawberries
  1. Cake Directions:
  2. To make the puree, put a bag of thawed frozen strawberries in the blender. Puree until smooth. (NOTE: Make sure they are thawed. It's way too difficult to get them to puree into a smooth mixture if they are still frozen or icy.
  3. Preheat oven to 350°F. Grease cake pans and set aside. (She used 3 8" pans, but I couldn't find any, so I used 2 9" pans. Not as fun or as cute, but still tasty!)
  4. Combine milk, strawberry puree, and vanilla. Set aside.
  5. Mix flour, sugar, baking powder, and salt in another bowl. Set aside.
  6. Cream the sugar, gelatin, and butter on medium speed until light and fluffy. Mixture will be thick - don't worry.
  7. Add the eggs individually, mixing well.
  8. Add the wet & dry ingredients to the butter mixture by alternating – beginning and ending with dry ingredients and mixing just enough after each addition to incorporate
  9. Divide batter into cake pans, smoothing with a spatula.
  10. Bake 25-30 minutes or until a toothpick comes clean when inserted into the center. Mine took the full 30 minutes, probably because they were larger than her three pans. I started checking at 20 minutes and added 5 minutes each time based on the toothpick consistency. 10. Let cool for 10 minutes, then invert onto wire racks. Let cool completely before frosting the cake.
  11. Whipped Strawberry Frosting Directions:
  12. Whip butter with electric mixer until light and creamy. Mine took 8 minutes and looked extremely silky smooth.
  13. Add vanilla, milk and confectioners' sugar. Beat on low for 1 minutes and medium for 5 minutes.
  14. Add strawberry puree and mix until incorporated.

Best Strawberry Cake Recipe – Notes from the Kitchen:

  • As mentioned above, make sure your strawberries are thawed enough so you can make the puree. I ended up having to let mine thaw more after putting them in the blender, so it took more time that it should have.
  • The whipped frosting is AMAZINGLY lightweight and may become my go-to for more dense cakes.  It spread easily, wasn’t too heavy, and was the most gorgeous shade of light pink.  (It would be an amazing cake for a baby shower!)
  • This cake received RAVE reviews from my family!  The flavor was more rich than the cake mix from a box and the cake was sweeter!  They also commented on how moist the cake stayed!
