Weekending – Red Velvet White Chocolate Cookies!
Yesterday, I made some red velvet white chocolate cookies to drop off at my grandmother’s for a Valentine’s Day surprise… I adopted a recipe from Sally’s Baking Addiction and put my own twist on it. Guys. These red velvet white chocolate cookies turned out perfect! Even my mom, a self proclaimed non-sweets eater, LOVED them.
Weekending – Valentine’s Day!
Pinky had my most favorite Valentine’s Day post that I’ve read so far… and I had hoped to get around to posting it earlier, butttttt I didn’t. You should check it out anyway. 🙂 We spent the weekend taking care of my mom’s dog while she headed to Lubbock with my grandmother, so it was a pretty low key weekend. We did manage to take advantage of the beautiful temperatures and hit up the Arboretum on Saturday.
Our night ended with my sweet husband fixing steaks for me and my mom… and a re-watching of the absolute cluster that was Saturday night’s debate… lolz. (Side note – if you don’t follow me on IG, you missed the sweet text where one of my mom’s friends told her that she had dropped flowers off at the house because she knew my dad wouldn’t miss Valentine’s Day. I just about died.) True story… my dad and I always sent my sister and I Valentine’s Day cards with a little something that we were instructed to only spend on relaxing, celebrating, or taking time off. Not going to lie – I missed that card the most this year… My dad and I even bought the same card for each other more than a couple times – what can I say? We had a thing for cute Dalmatian cards.

Weekending – Recipe Time!
- 1/2 cup of butter, softened
- 1 large egg
- 2 teaspoons of vanilla
- 1 tablespoon of milk
- 3/4 cup of light brown sugar
- 1/4 cup of sugar
- 1-1/2 cups of flour
- 1/4 cup of cocoa powder
- 1 teaspoon of baking soda
- 1/4 teaspoon of salt
- 1-1/3 cups of white chocolate chips
- Red food coloring
- Cream butter on medium speed. Add sugars; beat until fluffy.
- Add egg, vanilla, and milk. Beat until well combined. Add food coloring until dough is bright red. (I used Wilton Christmas Red)
- Mix together flour, cocoa powder, baking soda, and salt. Add dry ingredients to butter mixture until just combined.
- Stir in chocolate chips. Cover dough and chill for 1 hour.
- Preheat oven to 350 degrees. Line cookie sheets with parchment paper.
- Drop dough on to cookie sheets, bake for 10 minutes.

i’m going to need to politely ask you to refrain from posting any more delicious looking cookies and desserts for the next 5 weeks. because i will crack under no sugar pressure and rent an oven and cook these. they look SO GOOD.
